FOOD: linzer torte
the torte was a huuuge success at LL´s bday party. it´s simple and delish.
the original filling here in austria is redcurrant jam, but raspberry, apricot or cranberry are often used, too.
ingredients:
200g flour
200g confectioner´s sugar
200g ground hazelnuts
1 tablespoon cocoa powder
1 teaspoon ground cinnamon
1 dash ground cloves
200g butter
1 egg yolk
5 tablespoons redcurrant jam
directions:
in a bowl, combine the first 6 ingredients. cut in butter until mixture resembles coarse crumbs. add one egg yolk and stir until mixture forms a ball. divide the dough in 3 pieces. cover and refrigerate for about 2 hours.
remove two portions of the dough from the refrigerator. press into an ungreased 9 inch tarte pan w/ removeable bottom and spread the jam over it.
roll remaining dough into a rectangle and cut six 1-in.-wide strips. arrange in a lattice design over jam. bake at 175° degrees for 30-35 minutes or until crust is browned. cool completely.
